|Description:||Prepares and cooks food for clients in residence.|
|Duties:||1.0 Reviews dietitianís menu to determine type and quantities of meats, vegetables, soups, salads to be prepared.|
1.1 Always checks menu for pre-preparation needed.
1.2 Consistently sets up cooking area for preparing current dayís entrees and hot items; organizes work area before preparing food by organizing food items and necessary equipment.
1.3 Always check census for amounts to prepare; produce only necessary amounts.
1.4 Consistently follows dietitianís menu.
2.0 Prepares, cooks and serves three nutritional meals daily in accordance with menu.
2.1 Always prepares hot food in sufficient quantity.
2.2 Always produces a good and nutritional product; utilizes creativity and know-how in producing pleasing and taste appealing food.
2.3 Always has necessary hot food items in steam table just prior to serving.
2.4 Knows basic food preparation techniques, including receiving, storage, preparation, and holding of food items.
2.5 Familiar with dietary restrictions or modified diets.
2.6 Meals are always prepared and served on schedule.
3.0 Prepares snacks between meals for clients.
3.1 Nutritional snacks are available and served at scheduled intervals.
3.2 Coffee and soft drinks are set out and readily available.
4.0Assists the Food Service Coordinator in maintaining and ordering items for use in preparing meals.
4.1 Checks in food items accurately; maintains high standards of quality and freshness.
4.2 Consistently ensures that proper techniques are used in storage, handling, and holding of all food items.
4.3 Promptly reports food shortages, out-dated items, or any food items received in poor condition.
4.4 Regularly monitors use of food through inventory.
4.5 Utilizes cost control awareness at all times.
5.0 Maintains cooking area in a clean, neat and orderly manner.
5.1 Consistently maintains a clean, orderly and sanitary work area.
5.2 Demonstrates a working knowledge of food service sanitation and applicable Health Department Standards.
6.0 Performs other duties as requested.
6.1 Miscellaneous duties are performed according to instruction.
|Qualifications:||Demonstrated proficiency in reading and writing; ability to follow written/oral instructions and 3 years cooking experience, 2 years of which have been in institution or commercial cooking.|
